Delicious Date cake











Ingredients :

  1. All-purpose flour / maida - 7 tbsp
  2. Dates - 10 pitted
  3. Vegetable oil - 8 tbsp
  4. Baking powder - 2 tsp
  5. Eggs - 2
  6. Sugar powder - 6 tbsp
  7. Milk - 1 tbsp
  8. Salt - a pinch 
  9. Heavy whipping cream  - 1/4 cup
  10. Sugar syrup - 1/4 cup

Method :

  1. Soak the dates in water 6-7 hours or overnight.
  2. Blend to make puree, keep aside.
  3. Mix oil and sugar together until soft and the sugar has blended well. 
  4. Add the eggs and beat until well combined.
  5. Add the pureed dates and mix well. 
  6. Now add a pinch of salt, baking powder and mix .
  7. Then add the flour in small batches and carefully fold into the mixture, once incorporated repeat with the remaining flour.
  8. Transfer to a greased tin and bake in a pre-heated oven at 350F/180C for 40-45 mins until a tooth pick inserted into the cake comes out clean.
  9. Let it cool down to room temperature.

Frosting :

  1. In a large bowl, whip up the cream until light and fluffy. 
  2. Beat in vanilla essence, icing sugar and cocoa powder until peaks form. 
  3. Keep the frosting in the freezer for about an hour before using.

Decorating the cake :


  1. As soon as the cake cools down prick the top of the cake with a skewer to make tiny holes and pour in the sugar syrup.
  2. Once the sugar syrup is absorbed, Spread the cream over the cake from the center and cover the sides. 
  3. Decorate it with chocolate cigars and cherries. 
  4. Sprinkle some love ♥ and serve.

Sweet swirl pooris

 





Ingredients :

 

Dough :
  1. Maida / All purpose flour - 1 cup
  2. Ghee - 1/2 tbsp
  3. Salt - a pinch
  4. Milk - 1/4 cup
  5. Cold water - as needed

Filling :
  1. Rice flour - 1 tbsp
  2. Ghee - 1 tbsp

Syrup :
  1. Sugar - 2 cups
  2. Water - 1 cup
  3. Cardamom powder - 1 tsp

Oil - for deep frying

Method :

 

  1. Mix together rice flour and ghee to make a paste. Keep aside.
  2. In a bowl add maida, salt, ghee, and milk .
  3. Add cold water as needed to make a soft dough.
  4. Cover and keep aside for about an hour.
  5. Meanwhile prepare the sugar syrup, add 1 cup of water to 2 cups of sugar along with cardamom powder and make a slightly thick syrup.
  6. Now knead the dough and divide into equal proportions.
  7. Roll out each proportion into a thin chapati and apply the rice flour paste on it.
  8. Now roll the chapatis like a swiss roll and cut into small pieces.
  9. Press each piece into a poori with a rolling pin and deep fry until golden.
  10. Drop the pooris into the sugar syrup, let it absorb the syrup.
  11. Cool and serve.
