Banana cake - Our very first cake :)

I can't believe we really made this cake. This is our very first banana cake, and it came out absolutely perfect.
I was always afraid of baking so I never tried it . It was always my elder sis who used to do baking but my lil sister wanted to bake something in her Christmas holidays so we decided to try our hand at a very simple recipe from her baking notes and we chose this banana cake. The recipe was really simple and the outcome was great!!
So here's our first cake :)


Ingredients :

  1. All-purpose flour/maida - 1 cup
  2. Ripe Banana - 1
  3. Butter - 1/2 cup
  4. Baking powder - 1 tsp
  5. Eggs - 2
  6. Sugar - 3/4 cup
  7. Milk - 1 tbsp
  8. Vanilla extract - 1/2 tsp
  9. Salt - a pinch

Method :

  1. Blend the banana well with 1 tbsp of milk and keep aside.
  2. Cream the butter and sugar together until soft and the sugar has blended well. 
  3. Add the eggs and beat until well combined.
  4. Add the blended banana and mix well. 
  5. Now add the vanilla extract , pinch of salt, baking powder and mix .
  6. Then add the flour in small batches and carefully fold into the banana mixture, once incorporated repeat with the remaining flour.
  7. Transfer to a greased tin and bake in a pre-heated oven at 350F/180C for 40-45 mins until a tooth pick inserted into the cake comes out clean.
  8. Let it cool down to room temperature.
  9. Cut into slices and enjoy.

Beetroot Halwa / Chukandar ka halwa

                                   

 

 Ingredients:

  1. Beetroot - 1/2 kg  peeled and grated
  2. Sugar - 2 cups
  3. Milk - 1 cup
  4. Ghee  - 1  tbsp
  5. Cardamom - 2 crushed
  6. Almonds -  for garnish

Method :

  1. Peel and grate the beetroot .
  2. Pressure Cook the grated beetroot with 1 cup milk and 1 cup water for two whistles or till done.
  3. Heat ghee in a thick bottomed wok, add the pressure cooked beetroot to it. 
  4. Cook for a few minutes.
  5. Then add crushed cardamom and sugar, mix well.
  6. Cook till the sugar completely melts.
  7. When the mixture starts looking a little reduced and juicy, remove from heat.
  8. Do not dry completely. 
  9. Garnish with roasted almonds.
  10. Serve warm or chilled.

Fruit Custard




 

Ingredients :

  1. Vanilla flavored Custard powder - 1/2 pack
  2. Milk - 1 liter
  3. Sugar - 5 tbsp or as required
  4. Fruits - anything of your choice (What I used - Banana, apple,sweet lemon, chikoo)

Method :

  1. Chop the fruits of your choice and keep aside.
  2. In a bowl mix custard powder with 1 cup warm milk into a smooth paste without any lumps.
  3. Heat the remaining milk and bring it to a boil, add the custard mixture while stirring continuously.
  4. Let it cook for a minute or two, then add sugar and mix.
  5. Keep stirring till it reaches a creamy thick consistency.
  6. Remove and let it cool to room temperature.
  7. Then add the fruits and mix well. 
  8. Serve chilled.

Phalli kut / Peanut rice

 Peanut rice is an extremely simple and quick recipe. Best way to use leftover rice and a quick  lunchbox idea too.

 

 Ingredients :

  1. Cooked rice - 2 cups
  2. Peanuts - 1/2 cup roasted
  3. Carrot - 2 grated
  4. Capsicum - 1/2 finely chopped
  5. Soya sauce - 2 tsp
  6. Cumin seeds - 1/2 tsp
  7. Mustard seeds - 1/4 tsp
  8. Coriander - 1/2 bunch finely chopped
  9. Curry leaves - few leaves
  10. Green chillies - 2-3 chopped
  11. Red chilli powder - 1 tsp
  12. Ginger-garlic paste - 1/2 tsp
  13. Turmeric powder - 1/2 tsp
  14. Salt - to taste
  15. Oil - 1 tbsp

Method : 

  1. Heat oil in a wok, add cumin seeds and mustard seeds.
  2. When they start spluttering add ginger-garlic paste and saute.
  3. Add grated carrot, finely chopped capsicum and cook for a few minutes.
  4. Add chopped coriander, curry leaves and green chillies, stir.
  5. Now add red chilli powder, turmeric powder, salt and mix.
  6. Add the soya sauce and cook for another few minutes.
  7. Now add the roasted peanuts and cooked rice and mix well.
  8. Serve hot garnished with mint leaves.

Guava sweets


 Ingredients :

  1. Guava - fully ripe - 1 kg
  2. Sugar - 250 gms
  3. Lemon juice - 2 tsp
  4. Butter / ghee - 1 tbsp
  5. Red  food color

Method :


  1. Wash and cut the guavas into small pieces. Place in  a large vessel and add equal quantity of water and boil till the guava pieces become soft and pulpy.
  2. Mash, strain and remove the seeds.
  3. In another vessel add the guava pulp and cook for a few minutes.
  4. Now add sugar, butter, lemon juice and red color. Mix well.
  5. Cook till it becomes thick with continuous stirring. Do not let it stick to the bottom.
  6. Grease a plate and pour the mixture on it.
  7. Let the mixture cool completely.
  8. Cut into squares and store.

Sweet potato halwa






Ingredients :


  1. Sweet potatoes

     - 3 medium sized

     

     

     

  2. Ghee

    /oil - 1 tsp

     

     

  3. Milk

     - 1/2 cup

     

     

     

  4. Sugar

     - 4 tbsp

     

     

     

  5. Cardamom (elaichi) powder

     - 1/4 tsp

     

  6. Saffron

    - a few mixed with 1 tbsp milk 

  7. Roasted nuts (almonds ,cashew nuts ,pistachios etc.) - 1/2 cup chopped

      
  8. Dried figs (chopped), dates, raisins - 1/4 cup

Method :


  1. Clean and wash sweet potatoes and pressure cook for 3 to 4 whistles or till the potatoes are done.
  2. Peel and mash the sweet potatoes and keep aside.
  3. Heat the ghee/oil in a non-stick pan, add the mashed sweet potatoes and saute on a medium flame for few minutes.
  4. Add the milk and 1/2 cup of water, mix well.
  5. Now add the sugar and cardamom powder, mix.
  6. Cook on low flame for 1 to 2 minutes, make sure it is not completely dry.
  7. Add the saffron, figs, dates, raisins and  mix well.
  8. Garnish with chopped nuts.
  9. Serve hot with puris.

~ How to make Pasta dough ~

 Ingredients :

  1.  Flour - -1 cup
  2.  Egg - 1
  3. Olive oil - 1 tsp
  4. Salt - pinch

Method :

  1. Place a heap of the flour and make a well in the center.
  2. Break the egg into it with the white and beat with a fork.
  3. Add a pinch of salt and a tsp of olive oil.
  4. Mix till all the ingredients are combined completely.
  5. Now knead several times into a smooth ball.
  6. The dough will look like an elastic ball.
  7. Cover and set aside for 30 minutes.
  8. Divide the dough into small equal sized balls.
  9. Roll out each ball into a very thin chapati.
  10. Now cut the chapati into thin strips.
  11. Homemade pasta is ready.
 





 ~ Spicy pasta ~

Ingredients :

  1. Onions - 1 chopped
  2. Bell peppers - 1 chopped
  3. Green peas - 1 cup
  4. Green beans -5-6 chopped
  5. Carrots - 3 grated
  6. Curry leaves -  few
  7. Red chilli powder - 1 tsp
  8. Turmeric powder - 1/2 tsp
  9. Ginger-garlic paste - 1 tsp
  10. Salt - to taste
  11. Soya sauce -  2 tbsp
  12. Oil - 1 tbsp

Method : 

  1. In a large pot boil the water with little salt and oil.
  2. After water comes to the boil add the pasta.
  3. Cook the pasta until it is tender, drain the water and set the pasta aside.
 
  1. Heat oil in a wok and add chopped onions to it, saute.
  2. Add ginger-garlic paste and saute for few minutes.
  3. Add salt, red chilli powder, turmeric powder, mix.
  4. Now add the vegetables and cook until they are tender.
  5. Add soya sauce and put the boiled pasta, saute for a minute until pasta is well coated with all the masala.
  6. Keep stirring for a few minutes till the pasta is well combined with all the vegetables and masala.
  7. Serve hot.

Bread pudding


Hi my dear frndz, hope u all had a great weekend...
Today's recipe is bread pudding which is a very popular bread-based dessert.
This is a very simple version of pudding which is very rich, creamy and tastes awesome.
This pudding was made by my sisters , cuz I'm very bad at baking..:p
Here we have used bananas, apples and some dry fruits ,you can add any nuts, pieces of chocolate, lemon or orange zest, fresh fruits to the pudding for more flavor and texture.
It can be served warm or cold with a dusting of powdered sugar and a dollop of  whipped cream or vanilla ice cream.
I could take only one pic of this lovely pudding before I could take any more photographs, everyone finished it completely :o... clean plate no trace of any pudding wowww...!




Ingredients :

  1. Bread - 4-5 slices
  2. Butter - 2 tbsp
  3. Cinnamon powder  - a pinch
  4. Custard powder - 1 tbsp
  5. Eggs - 3 
  6. Milk - 2  cups
  7. Sugar - 3 tbsp
  8. Vanilla essence - 2 drops 
  9. Bananas - 1 sliced 
  10. Apples - 1/2 cup chopped
  11. Almonds, cashew nuts - 1/2 cup chopped
  12. Raisins - 1/4 cup

Instructions :

  1. In a bowl take milk and butter mix well.
  2. Take custard powder in a bowl add milk and make a paste.
  3. Mix this mixture to milk mixture, keep aside.
  4. In another bowl break eggs add cinnamon powder, vanilla essence, sugar. Mix well.
  5. Now add milk mixture and mix .
  6. Now in a microwave bowl spread the bread cut into small pieces / cubes, add raisins, bananas,apple, chopped almonds and cashew nuts now pour half of the mixture, place another layer of bread and pour the mixture over it.
  7. Make sure that all the bread pieces are soaked well in the milk-egg mixture.
  8. Bake the pudding at about 340 to 350o F for 45 to 50 mins or till it turns to light golden brown color.
  9. Serve warm or cold dusted with sugar.

Hyderabadi Khatti Dal

Hi everyone, hope u all are doin great.
Today's recipe is Hyderabadi khatti dal, it is the most simplest and common dal curry cooked very often in every house here.
It is spicy and sour, goes well with a bowl of hot rice,papad and pickle.
Actually almost anything goes well with khatti dal.
So here is the recipe of everyone's favorite khatti dal.









Ingredients :

  1. Toor dal (Yellow lentils) - 1 cup
  2. Tomatoes - 3 chopped
  3. Red chilli powder - 2 tbsp
  4. Turmeric powder - 1 tsp
  5. Ginger-garlic paste - 1 tbsp
  6. Salt - to taste
  7. Tamarind/imli juice - 2 cups
  8. Coriander - 1/2 bunch finely chopped
  9. Curry leaves - 1/2 bunch
  10. Green chillies - 3-4 chopped
  11. Water - 3 cups

For Seasoning :

  1. Oil - 3 tbsp
  2. Cumin seeds - 2 tsp
  3. Dried red chillies - 3-4
  4. Garlic cloves - 2-3
  5. Curry leaves - 4-5

Method:


1. In a pressure cooker add the washed toor dal, tomatoes, coriander, green chillies, curry leaves, red chilli powder, turmeric, ginger-garlic paste and 2 cups of water.
2. Pressure cook it for 2 whistles just to tenderize the lentils.
3. When the dal is tender, grind it into paste using a masher.
4. Now add tamarind juice, some more green chillies, curry leaves and required amount of water (acc to the consistency you want, I like it thin ). Let it cook for as long as the chillies turn yellow, set aside.
5. Now heat oil in a pan and add cumin seeds, dried red chillies, garlic cloves and curry leaves to it.
6. Remove from heat and pour over the dal. [ this is called as tadka or bagar ]
7. Serve hot with plain rice and anything you want.

Shimla mirch keema / Bell pepper minced meat


Shimla mirch and keema / minced meat is a great combo, goes well with both rice and chapatis.

 Ingredients :

  1. Minced meat / kheema - 500 gms
  2. Bell peppers - 2 big (sliced)
  3. Onions - 3 medium (chopped)
  4. Coriander - 1 cup (chopped)
  5. Green chillies - 3-4 (chopped)
  6. Red chilli powder - 2 1/2 tsp
  7. Turmeric powder - 1/2 tsp
  8. Ginger-garlic paste - 1 tsp
  9. Salt -to taste
  10. Oil - 3 tbsp

Method :

  1. Wash and clean the minced meat. Transfer it to a bowl.
  2. Add red chilli powder, turmeric powder, ginger-garlic paste and salt to it.
  3. Put the marinated minced meat onto a tawa / flat pan.
  4. Add oil and 1 cup of water to it.
  5. Cook on a medium flame till all the water is absorbed.
  6. Now add chopped coriander, green chillies and sliced bell peppers to the meat.
  7. Mix well and add 1 more cup of water to it.
  8. Cover and cook on slow flame until all the water is absorbed or till the meat is done.
  9. Remove and serve hot garnished with coriander leaves with rice and khatti dal or hot chapatis.
