Crepes with chocolate sauce.

Crepe is a popular french dish, eaten as breakfast or dessert. Crepes can be savory or sweet.
Sweet crepes are often filled and topped with chopped fresh fruits, whipped cream, jams, chocolate spreads, honey, fruit syrups or simply dusted with some sugar.
Crepes are similar to pancakes, but are very thin comparatively.

Lets make some crepes filled with fresh fruits and topped with irresistible chocolate sauce.





Crepes



Ingredients :



  1. All purpose flour / Maida - 1 cup
  2. Milk - 1 cup
  3. Sugar - 3 tbsp [ powdered ] 
  4. Eggs - 2 eggs
  5. Butter / vegetable oil - 2 tbsp 
  6. Salt - a pinch



Method :


  1. Sift together flour and salt.
  2. In a large bowl put eggs and beat them lightly, gradually add in the milk and butter. 
  3. Add in the dry ingredients and mix until smooth.
  4. Or you can add all the ingredients together and blend them nicely into a smooth batter.
  5. Heat a griddle on medium flame, pour a ladle full of batter onto it and tilt the griddle so that the batter spreads evenly.
  6. Cook for about a minute or till the bottom turns light golden brown.
  7. Flip and cook the other side.
  8. Serve hot with any desired filling and topping.

Chocolate sauce 



Ingredients :


  1. Cocoa powder - 1/2 cup
  2. Butter - 1/2 cup
  3. Milk - 1/2 cup
  4. Powdered sugar - 3 1/2 cup



Method :


  1. In a bowl sift together cocoa powder and sugar.
  2. To this add melted butter and mix well until smooth.
  3. Pour some milk and mix well to a spreading consistency.


To serve 

  1. Place crepes on a serving plate, put a spoonful of desired fruits in the center of crepes.
  2. Fold the crepes, drizzle with some chocolate sauce.
  3. Dust some sugar powder if desired and serve immediately.

Spicy Chole

Chole are one of my favorites, and there is nothing like my elder sister's spicy chole with hot pooris. 
Here's a mouthwatering chole recipe straight from Kausers kitchen.

Ingredients :


  1. Chick peas (kabuli chana) - 250 grams
  2. Onions - 2 finely (chopped)
  3. Tomatoes - 2 (chopped)
  4. Boiled potatoes - 1/4 cup (diced)
  5. Green Chillies - 2-4 (chopped)
  6. Coriander - 1 cup (finely chopped)
  7. Mint leaves - 1/2 cup
  8. Red chilli powder - 2 1/2 tsp
  9. Ginger-garlic paste - 1 tsp
  10. Salt - to taste
  11. Turmeric powder - 1/2 tsp
  12. Chole masala - 3 tsp
  13. Black pepper powder - 1/4 tsp
  14. Coriander powder - 1/2 tbsp
  15. Teabag / tealeaves tied in a muslin cloth -   1
  16. Oil - 2 tbsp
  17. Water - as needed

 

 



 


Method :

  1. Wash and soak the chickpeas in enough water overnight. 
  2. Drain chickpeas and put in pressure cooker.
  3. Add enough water, little salt, turmeric powder and teabag / tealeaves tied in muslin cloth. 
  4. Pressure cook until soft and completely cooked. 
  5. Drain and discard the teabag.
  6. Heat oil in a pan and add chopped onions, fry till they become transparent.
  7. Add ginger-garlic paste, red chilli powder, salt, turmeric powder, coriander powder, black pepper powder and mix well.
  8. Now add chopped tomatoes, boiled potatoes, chopped coriander, mint leaves, green chillies and saute.
  9. Cook for a few minutes, then add the boiled chick peas and a little water according to the consistency of the gravy you want.
  10. Simmer and cook for another 5-6 minutes till the chick peas absorb all the flavors.
  11. Garnish with fresh coriander and chopped onions.
  12. Squeeze in some fresh lemon juice and serve hot with pooris / bhaturas.

Carrot-Capsicum Uttapam / Indian pancakes

 Uttapam is a delicious and super quick breakfast recipe made from rava / semolina with 
     different kinds of  veggies as toppings also called as savory indian pancakes.
     Here's a yummy uttapam recipe that's really easy to make.




 

Ingredients :

  1. Rava / semolina - 2 cups
  2. Curd - 2 cups
  3. Onion - 1 finely chopped
  4. Carrots - 2 grated
  5. Capsicum - 1 finely chopped / grated
  6. Salt - as per taste
  7. Cumin seed powder - to sprinkle
  8. Red chilli powder - to sprinkle

Method :

  1. Mix the rava and yogurt together in equal quantities to form a batter.
  2. Let it rest for about 30 minutes.
  3. Then add salt as per your taste and mix well.
  4. It should have the consistency of pancake batter so add a little water to have the right consistency.
  5. Heat a skillet and Pour a ladle full of batter and spread gently. 
  6. Add the chopped onions, capsicum and carrot on top. 
  7. Sprinkle some cumin seed powder and red chilli powder.
  8. Drizzle a little oil around the edges for cooking.
  9. Let it cook for a couple of minutes on one side and then flip. 
  10. Cook for another couple of minutes, till its done.
  11. Serve hot with coconut chutney or any chutney of your choice.

Saag Puri




Ingredients :

 

For the puris :

Wheat flour - 2 cups
Salt -1/4 tsp (or as needed for taste)
Oil - 1 tsp
Water - for dough

For Saag :

  1. Potatoes - 2 large (cut into cubes)
  2. Tomatoes - 3
  3. Green Beans - 5-6
  4. Carrots - 4
  5. Peas - 1/2 cup
  6. Onion - 1 (sliced)
  7. Coriander - 1/2 bunch ()chopped
  8. Green chilies - 2-3 (chopped)
  9. Salt - to taste
  10. Ginger-garlic paste - 1 tbsp
  11. Red chilli powder - 2 tsp
  12. Turmeric powder - 1/2 tsp
  13. Cumin seed powder - 1/2 tsp
  14. Coriander powder - 1/2 tsp
  15. Amchur powder -  1/2 tsp
  16. Curd - 1 cup
  17. Cumin seeds - 1/4 tsp
  18. Mustard seeds - 1/4 tsp
  19. Oil - 2 tbsp
  20. Water -  as needed

 Method :

 

For Puris:

  1. Mix all the ingredients and knead into a soft and smooth dough.
  2. Cover and keep aside for about 30 minutes.
  3. Now divide the dough into small balls.
  4. Roll out each ball into a small chapati.
  5. Don't make it too thin else it will come out crispy.
  6. Deep fry the puris until they are evenly golden yellow on both sides.
  7. Place on a paper towel to remove any excess oil.

For the Saag :

  1. Chop all the vegetables and keep aside.
  2. Heat oil in a wok and add cumin seeds and mustard seeds , when they start spluttering add the sliced onions.
  3. When the onions turn transparent and slight pinkish add ginger-garlic paste, saute well.
  4. Add turmeric powder and mix.
  5. Now add all the chopped veggies, coriander, green chillies and  stir.
  6. Then add red chilli powder, salt, cumin seed powder, amchur powder, coriander powder and mix well.
  7. Cook for about 2-3 mins and then add sufficient water.
  8. Let it cook till all the veggies are done and the water is absorbed well.
  9. At this point add curd and mix well.
  10. Add enough water according to your need depending upon the consistency you desire for the saag.
  11. Now cook for 5-6 mins.
  12. Garnish with chopped coriander.
  13. Serve hot with puris.

Medu Vada




Medu Vada is a traditional South Indian recipe.This delicious vadas are normally eaten for breakfast and are famous tiffin items for kids.
These medu vadas are so crispy on the outside and  fluffy inside and are best served with sambar and coconut chutney.
Enjoy these crispy and simply delicious snack .

 

Ingredients :

  1. Urad dal / Mash dal  -  1 cup
  2. Rice flour  -  1 tbsp for the crisp
  3. Black pepper powder   -  1 tsp
  4. Coconut   -  2 tbsp (thinly sliced)
  5. Curry leaves  -  1 tbsp (chopped)
  6. Green chillies  -  2-3 (finely chopped)
  7. Ginger-garlic paste  -  1/2 tsp
  8. Salt  -  to taste
  9. Ajwain / carom seeds  -  1/4 tsp (optional)

Method :

  1. Wash and soak the urad dal in water 6-7  hours or overnight.
  2. Drain all the water and blend into a fine paste.No need to add additional water.the mixture should be slightly thick.
  3. Now add black pepper powder, chopped green chillies ,curry leaves, sliced coconut, ginger-garlic paste, carom seeds, salt and rice flour. Mix well.
  4. Take the batter into a deep bowl and beat with hand for about 2-3 minute to make the batter light.
  5. Keep a bowl with water ready before frying vadas.
  6. Heat oil in wok on a medium to low flame.
  7. Wet your hand and take lemon sized batter in your hand and with your thumb make a hole in the center, immediately slide it in the hot oil.
  8. Deep fry the vadas till nicely golden brown in color.
  9. Remove on a paper towel.
  10. Your crispy tasty medu vadas are ready .
  11. Serve hot with coconut chutney or sambhar.


Note :

  1. Test fry the vadas.
  2. If the batter is too thick and the vadas don't come as fluffy and light , then add very little water.
