Delicious Date cake











Ingredients :

  1. All-purpose flour / maida - 7 tbsp
  2. Dates - 10 pitted
  3. Vegetable oil - 8 tbsp
  4. Baking powder - 2 tsp
  5. Eggs - 2
  6. Sugar powder - 6 tbsp
  7. Milk - 1 tbsp
  8. Salt - a pinch 
  9. Heavy whipping cream  - 1/4 cup
  10. Sugar syrup - 1/4 cup

Method :

  1. Soak the dates in water 6-7 hours or overnight.
  2. Blend to make puree, keep aside.
  3. Mix oil and sugar together until soft and the sugar has blended well. 
  4. Add the eggs and beat until well combined.
  5. Add the pureed dates and mix well. 
  6. Now add a pinch of salt, baking powder and mix .
  7. Then add the flour in small batches and carefully fold into the mixture, once incorporated repeat with the remaining flour.
  8. Transfer to a greased tin and bake in a pre-heated oven at 350F/180C for 40-45 mins until a tooth pick inserted into the cake comes out clean.
  9. Let it cool down to room temperature.

Frosting :

  1. In a large bowl, whip up the cream until light and fluffy. 
  2. Beat in vanilla essence, icing sugar and cocoa powder until peaks form. 
  3. Keep the frosting in the freezer for about an hour before using.

Decorating the cake :


  1. As soon as the cake cools down prick the top of the cake with a skewer to make tiny holes and pour in the sugar syrup.
  2. Once the sugar syrup is absorbed, Spread the cream over the cake from the center and cover the sides. 
  3. Decorate it with chocolate cigars and cherries. 
  4. Sprinkle some love ♥ and serve.

Crepes with chocolate sauce.


~ Celebrating 100 followers :) ~


Crepe is a popular french dish, eaten as breakfast or dessert. Crepes can be savory or sweet.
Sweet crepes are often filled and topped with chopped fresh fruits, whipped cream, jams, chocolate spreads, honey, fruit syrups or simply dusted with some sugar.
Crepes are similar to pancakes, but are very thin comparatively.

Lets make some crepes filled with fresh fruits and topped with irresistible chocolate sauce.





Crepes



Ingredients :



  1. All purpose flour / Maida - 1 cup
  2. Milk - 1 cup
  3. Sugar - 3 tbsp [ powdered ] 
  4. Eggs - 2 eggs
  5. Butter / vegetable oil - 2 tbsp 
  6. Salt - a pinch



Method :


  1. Sift together flour and salt.
  2. In a large bowl put eggs and beat them lightly, gradually add in the milk and butter. 
  3. Add in the dry ingredients and mix until smooth.
  4. Or you can add all the ingredients together and blend them nicely into a smooth batter.
  5. Heat a griddle on medium flame, pour a ladle full of batter onto it and tilt the griddle so that the batter spreads evenly.
  6. Cook for about a minute or till the bottom turns light golden brown.
  7. Flip and cook the other side.
  8. Serve hot with any desired filling and topping.

Chocolate sauce 



Ingredients :


  1. Cocoa powder - 1/2 cup
  2. Butter - 1/2 cup
  3. Milk - 1/2 cup
  4. Powdered sugar - 3 1/2 cup



Method :


  1. In a bowl sift together cocoa powder and sugar.
  2. To this add melted butter and mix well until smooth.
  3. Pour some milk and mix well to a spreading consistency.


To serve 

  1. Place crepes on a serving plate, put a spoonful of desired fruits in the center of crepes.
  2. Fold the crepes, drizzle with some chocolate sauce.
  3. Dust some sugar powder if desired and serve immediately.

Hareera

Hareera is a sweet soup or drink made from sooji / semolina usually served with parathas or bun enjoyed in almost every hyderabadi home especially during winter season.
This delicious soup is a liquified form of the sooji halwa garnished with dry fruits and is good to keep you warm during winter days.







Ingredients :

  1. Sooji / semolina - 1 cup
  2. Sugar - 2 cups
  3. Ghee - 1 tbsp
  4. Cardamom -  2
  5. Water - 4 cups
  6. Chopped Almonds and Pistachios - 1 cup
 

Method : 

  1. Heat ghee and add the cardamoms .
  2. Then add  sooji / semolina and fry till it slightly changes its colour. Do not burn it.
  3. Then add water and cook on medium heat for about 2-3 minutes till semolina is properly cooked, keep stirring.
  4. Now add sugar and mix well.
  5. Cook for another minute or two, the consistency in the end should be runny but thick. 
  6. Garnish with nuts of your choice. 
  7. And serve warm.
  8. It can be served with  parathas, buns, bread or can be enjoyed plain.

Coconut cake with simple cream frosting

Ingredients :

  1. All-purpose flour/maida - 1 cup
  2. Coconut  - 1 cup grated
  3. Butter - 1/2 cup
  4. Baking powder - 1 tsp
  5. Eggs - 2      {egg substitute : 1/4 cup condensed milk}
  6. Sugar - 3/4 cup
  7. Milk - 1 tbsp
  8. Vanilla extract - 1/2 tsp
  9. Salt - a pinch 
  10. Raisins - 1/4 cup
  11. Yellow food color


Method :

  1. Pre-heat the oven to 350F/180C.
  2. Cream the butter and sugar together until soft and the sugar has blended well. 
  3. Add the eggs, one at a time and beat until well combined.
  4. Add the grated coconut and raisins,  mix well.
  5. Now add the vanilla extract , pinch of salt and mix .
  6. Then carefully fold in the flour along with baking powder into the coconut mixture.
  7. Pour the mixture into a greased tin.
  8. Bake in the preheated oven until a toothpick inserted in the center comes out clean. 
  9. Cool the cake in the tin for 10 minutes, then turn the cake out onto a wire rack to cool completely.



 

 

 

 

 

 

 

 

 

 

 

 

 

 

  

 

 

 

 

 

 

Simple cream frosting:

  1. In a large bowl, whip cream until light and fluffy. 
  2. Beat in vanilla essence, icing sugar and yellow food color until peaks form. 
  3. Keep the frosting in the freezer for about an hour before using.
  4. Spread the cream over the cake from the center and cover the sides.
  5. Decorate it with sliced apples and bananas.
  6. Sprinkle some crushed pistachios and Ta da! Your cake is ready.

Pooran poli / Pooran roti




Ingredients :

 

For pooran :

 

  1. Chana dal / Split Bengal gram  - 2 cups
  2. Jaggery / sugar - 1 1/2 cup 
  3. Fennel seeds / saunf - 1 tbsp
  4. Oil - 2 tbsp

For the dough :


  1. Wheat flour / all purpose flour - 2 cups
  2. Salt - a pinch
  3. Oil / ghee - for smearing

Method : 

 

For pooran :

  1. Wash and cook chana dal along with jaggery in a pressure cooker till the dal is soft and completely done.
  2. Meanwhile dry roast the fennel seeds on medium flame till it emits a pleasant aroma, cool and grind into fine powder.
  3. When the dal is done, drain the excess water and mash it with a wooden masher or you can even blend it in a mixer
  4. Add the fennel seed powder to the dal paste and mix well.
  5. Heat oil in a large vessel and add the dal paste into it and fry for a few minutes.
  6. Cook till the mixture thickens and is completely dry
  7. Remove and let it cool to room temperature.    

For the dough :

  1. Combine the wheat flour, salt and oil/ghee in a bowl and knead into a soft dough using enough water.
    Cover the dough with a muslin cloth and allow it to rest for atleast 30 minutes.
    Divide the dough into equal portions and keep aside.
  2. Roll out each portion of the dough into a small poori. 
  3. Place a portion of the filling mixture and fold the edges of the dough over the filling. 
  4. Again roll out each stuffed ball into a flat chapati.
  5. Heat a griddle or tawa on medium to low flame 
  6. Put the chapati on the griddle and cook till light golden then apply oil / ghee and flip to cook on the other side.
  7. Cook the chapati till golden brown on both the sides applying oil on each side.
  8. Serve hot.

Banana pancakes

Banana pancakes are very easy to whip up and these delicious pancakes are perfect for any time of day!


 

 Ingredients:

  1.  Wheat flour - 2 cup
  2.  Sugar, powdered- 3 tbsp or as needed
  3.  Baking powder - 2 tsp
  4.  Salt - 1/2 teaspoon
  5.  Eggs - 2
  6.  Milk - 1  1/2 cup
  7.  Oil - 2 tbsp
  8.  Ripe banana - 1 big

Method :

  1. In a large bowl combine all the dry ingredients i.e; wheat flour, powdered sugar, baking powder and salt.
  2. Blend the bananas and milk together in a mixer. 
  3. In a separate bowl, mix together eggs, banana-milk mixture and oil. 
  4. Slowly add wet ingredients to the dry ingredients. Mix well until smooth.
  5. If the batter seems too thick to pour, add a little more milk.
  6. Heat a griddle or frying pan over medium high heat. 
  7. Pour a ladle full of the batter onto the griddle.
  8. Cook until bubbles appear on the surface.
  9. Flip and cook on the other side until golden.
  10. Serve hot drizzled with honey.
 

Note : 

You can simply skip adding eggs if you want vegan version of pancakes and increase the quantity of banana, for the above recipe you can replace the eggs with 2 bananas instead of 1. The mashed banana will bind everything together and  keeping it moist and fluffy.

Rabri

Rabri is a creamy, rich and delicious dessert which is really easy to make with very few ingredients. Though it is time consuming but it's worth it cuz it tastes divine.




Ingredients :




  1. Milk - 1 liter
  2. Sugar - 4 tbsp or as needed
  3. Green cardamoms - 4
  4. Almonds - for garnish

Method :

  1. Bring the milk to boil in a deep heavy pan.
  2. Cook slowly on low heat until the milk is reduced to one quarter.
  3. Add sugar and cardamom, stir it in well.
  4. Cook till the Sugar is completely dissolved.
  5. Let it thicken to a creamy consistency.
  6. Remove and let it cool to room temperature.
  7. Keep in the Fridge for few hours.
  8. When chilled garnish with almonds and serve.

Beetroot Halwa / Chukandar ka halwa

                                   

 

 Ingredients:

  1. Beetroot - 1/2 kg  peeled and grated
  2. Sugar - 2 cups
  3. Milk - 1 cup
  4. Ghee  - 1  tbsp
  5. Cardamom - 2 crushed
  6. Almonds -  for garnish

Method :

  1. Peel and grate the beetroot .
  2. Pressure Cook the grated beetroot with 1 cup milk and 1 cup water for two whistles or till done.
  3. Heat ghee in a thick bottomed wok, add the pressure cooked beetroot to it. 
  4. Cook for a few minutes.
  5. Then add crushed cardamom and sugar, mix well.
  6. Cook till the sugar completely melts.
  7. When the mixture starts looking a little reduced and juicy, remove from heat.
  8. Do not dry completely. 
  9. Garnish with roasted almonds.
  10. Serve warm or chilled.

Fruit Custard




 

Ingredients :

  1. Vanilla flavored Custard powder - 1/2 pack
  2. Milk - 1 liter
  3. Sugar - 5 tbsp or as required
  4. Fruits - anything of your choice (What I used - Banana, apple,sweet lemon, chikoo)

Method :

  1. Chop the fruits of your choice and keep aside.
  2. In a bowl mix custard powder with 1 cup warm milk into a smooth paste without any lumps.
  3. Heat the remaining milk and bring it to a boil, add the custard mixture while stirring continuously.
  4. Let it cook for a minute or two, then add sugar and mix.
  5. Keep stirring till it reaches a creamy thick consistency.
  6. Remove and let it cool to room temperature.
  7. Then add the fruits and mix well. 
  8. Serve chilled.

Sweet potato halwa






Ingredients :


  1. Sweet potatoes

     - 3 medium sized

     

     

     

  2. Ghee

    /oil - 1 tsp

     

     

  3. Milk

     - 1/2 cup

     

     

     

  4. Sugar

     - 4 tbsp

     

     

     

  5. Cardamom (elaichi) powder

     - 1/4 tsp

     

  6. Saffron

    - a few mixed with 1 tbsp milk 

  7. Roasted nuts (almonds ,cashew nuts ,pistachios etc.) - 1/2 cup chopped

      
  8. Dried figs (chopped), dates, raisins - 1/4 cup

Method :


  1. Clean and wash sweet potatoes and pressure cook for 3 to 4 whistles or till the potatoes are done.
  2. Peel and mash the sweet potatoes and keep aside.
  3. Heat the ghee/oil in a non-stick pan, add the mashed sweet potatoes and saute on a medium flame for few minutes.
  4. Add the milk and 1/2 cup of water, mix well.
  5. Now add the sugar and cardamom powder, mix.
  6. Cook on low flame for 1 to 2 minutes, make sure it is not completely dry.
  7. Add the saffron, figs, dates, raisins and  mix well.
  8. Garnish with chopped nuts.
  9. Serve hot with puris.
