Beetroot Raita






Beetroot Raita,a dish which looks beautiful, tastes wonderful and is super easy to make. 
A perfect side for vegetable biryani or veg pulao.


Ingredients :


  1. Beetroot - 1
  2. Curd - 1 cup
  3. Onions - 1/2, chopped
  4. Cucumber - 1/2, chopped
  5. Salt - as per taste
  6. Cumin powder - 1 tsp

Method : 


  1. Boil, Peel and puree the beetroot.
  2. Whisk the curd in a bowl and the pureed beetroot, give it a  mix should give a nice dark pink color. Lovely isn't it?
  3. Now add the chopped onions, chopped cucumbers, cumin powder and salt as per taste.
  4. Garnish with mint leaves and serve.

Dahi ki chutney






Ingredients :



  1. Plain yogurt - 1 cup
  2. Salt - to taste
  3. Coriander  - 2 tsp
  4. Mint leaves - 1 tsp
  5. Green chilies - 1-2
  6. Chopped onion - 1 small


Method :



  • In a bowl whip the yogurt.
  • Add salt, chopped coriander, mint leaves, green chilies and onions.
  • Add a little water about 1/4 cup.
  • Mix well.
  • Serve cold with Biryani.
  • Goes well with all types of Biryanis, tahari and plain rice.

Tomato chutney

Spicy and tangy chutney goes well with chapatis and rice.
Today I prepared it as an accompaniment with khichdi for breakfast. 
This is a basic and very simple tomato chutney recipe, here tomatoes are cooked at low flame till they are mashed up, then spices are added to give it a flavor. Coriander powder gives a special flavor to this chutney. 


 



Ingredients :

  1. Tomatoes  - 7-8 (chopped)
  2. Salt - to taste
  3. Ginger-garlic paste - 1 tbsp
  4. Turmeric - 1/2 tsp
  5. Red chilli powder - 2 tbsp
  6. Green chillies - 3-4(chopped)
  7. Curry leaves - 7-8
  8. Coriander - 1/2 bunch(finely chopped)
  9. Oil - 1 1/2 tbsp
  10. Cumin seeds - 1 tsp
  11. Mustard seeds - 1/2 tsp
  12. Fenugreek seeds - 1 1/2 tbsp
  13. Coriander powder / dhania pwdr - 1 tbsp
 

Method :

1. Heat oil in a wok and add cumin, mustard and fenugreek seeds. Remove from flame when the seeds start to splutter. Let it cool a bit.
2. Add the chopped tomatoes to the wok along with
red chilli pwdr, turmeric pwdr, ginger-garlic paste, salt and coriander powder. Mix well. 
3. Now add coriander, curry leaves, green chillies and stir.
 



 4. Cook on a slow flame till the tomatoes are mushy. Beat with a flat spoon to mash the tomatoes and mix well.

 

5. Tomato chutney is ready. Serve hot garnished with coriander with a bowl of rice or chapatis.

Til ki chutney /sesame seed chutney





 Ingredients :


  1. Sesame seeds - 100 gms
  2. Salt - to taste
  3. Chopped ginger - 1 inch piece
  4. Chopped garlic - 3-4 cloves
  5. Red chilli powder - 1/2 tsp
  6. Green chillies - 6-8
  7. Mint leaves - 1 bunch
  8. Coriander - 1 bunch
  9. Onion - 1 small sliced
  10. Tamarind pulp - 1 cup
  11. Tomatoes - 2 chopped
  12. Oil - 1 tbsp

Method:

1. Roast the sesame seeds slightly in a pan.
2. Heat a little oil in another pan and add the chopped tomatoes and saute for a few minutes.keep aside.
3. First grind the roasted sesame seeds separately.
4. Now add ginger, garlic, mint, coriander, green chillies, tomatoes,red chilli powder, and salt. Grind into a fine paste.
5. Add thick tamarind pulp and blend once again. Add little water if needed to get the right consistency.
6. Pour the content in a bowl and add the sliced onions to it.
7. Heat oil in a pan, add cumin seeds and dried red chillies.
8. Add this tadka to the chutney and garnish with coriander.
9. Serve hot.
