Beetroot Raita,a dish which looks beautiful, tastes wonderful and is super easy to make.
A perfect side for vegetable biryani or veg pulao.
Ingredients :
- Beetroot - 1
- Curd - 1 cup
- Onions - 1/2, chopped
- Cucumber - 1/2, chopped
- Salt - as per taste
- Cumin powder - 1 tsp
Method :
- Boil, Peel and puree the beetroot.
- Whisk the curd in a bowl and the pureed beetroot, give it a mix should give a nice dark pink color. Lovely isn't it?
- Now add the chopped onions, chopped cucumbers, cumin powder and salt as per taste.
- Garnish with mint leaves and serve.

Ingredients :
- All-purpose flour / maida - 7 tbsp
- Dates - 10 pitted
- Vegetable oil - 8 tbsp
- Baking powder - 2 tsp
- Eggs - 2
- Sugar powder - 6 tbsp
- Milk - 1 tbsp
- Salt - a pinch
- Heavy whipping cream - 1/4 cup
- Sugar syrup - 1/4 cup
Method :
- Soak the dates in water 6-7 hours or overnight.
- Blend to make puree, keep aside.
- Mix oil and sugar together until soft and the sugar has blended well.
- Add the eggs and beat until well combined.
- Add the pureed dates and mix well.
- Now add a pinch of salt, baking powder and mix .
- Then add the flour in small batches and carefully fold into the
mixture, once incorporated repeat with the remaining flour.
- Transfer to a greased tin and bake in a pre-heated oven at 350F/180C
for 40-45 mins until a tooth pick inserted into the cake comes out
clean.
- Let it cool down to room temperature.
Frosting :
- In a large bowl, whip up the cream until light and fluffy.
- Beat in vanilla essence, icing sugar and cocoa powder until
peaks form.
- Keep the frosting in the freezer for about an hour before using.
Decorating the cake :
- As soon as the cake cools down prick the top of the cake with a skewer to make tiny holes and pour in the sugar syrup.
- Once the sugar syrup is absorbed, Spread the cream over the cake from the center and cover the sides.
- Decorate it with chocolate cigars and cherries.
- Sprinkle some love ♥ and serve.

Dough :
- Maida / All purpose flour - 1 cup
- Ghee - 1/2 tbsp
- Salt - a pinch
- Milk - 1/4 cup
- Cold water - as needed
Filling :
- Rice flour - 1 tbsp
- Ghee - 1 tbsp
Syrup :
- Sugar - 2 cups
- Water - 1 cup
- Cardamom powder - 1 tsp
Oil - for deep frying
Method :
- Mix together rice flour and ghee to make a paste. Keep aside.
- In a bowl add maida, salt, ghee, and milk .
- Add cold water as needed to make a soft dough.
- Cover and keep aside for about an hour.
- Meanwhile prepare the sugar syrup, add 1 cup of water to 2 cups of sugar along with cardamom powder and make a slightly thick syrup.
- Now knead the dough and divide into equal proportions.
- Roll out each proportion into a thin chapati and apply the rice flour paste on it.
- Now roll the chapatis like a swiss roll and cut into small pieces.
- Press each piece into a poori with a rolling pin and deep fry until golden.
- Drop the pooris into the sugar syrup, let it absorb the syrup.
- Cool and serve.
